Well first let me apologise for not blogging for the last couple months, internet problems; they're a pain sometimes. Anyhow, i'm back and i've got so much to share with you. Loads of stuff that would make your sweet tooth squeal with delight. :D

Cute Ideas for Cheesecakes
Well this week I would be featuring other cheesecakes which I have not done myself but I have found to be very interesting. The first picture features lemon cheesecake squares wish would make lovely party gifts if you are entertaining friends and you don't want them to go home empty handed.
The next cheesecake I am excited about. It is the successful marriage of my two favourite desserts; chocolate and cheesecake....mmmm-mmmm.
Here, instead of using a traditional crust at the bottom of the cheesecake, there is a layer of brownie.
Last but not least, this Mint Meltaway cheesecake made by Eli's Cheesecake company using ingredients you would find in Fannie May Chocolates. Looks delightful, does it not? It reminds me of an ice-cream sandwich. People sure are getting more and more creative with cheesecakes these days.
It's amazing the way cheesecakes can be made to resemble you favourite drinks and desserts. Until next time, keep sharing the joy!

If at First You Don't Succeed.....Try, Try Again!
Well all my friends know that cheesecakes are my specialty. However, I will not hesitate to try my hand at regular cakes like the strawberry cake with cream cheese frosting.....mmmm-mmmm! I tried it one Christmas and it was absolutely delightful...I mean it was lick your plate good. But I don't always hit the mark the first time round. That's why I marvel at works of Duff and his team on the "Ace of Cakes" show on the Food Network channel...He can get cake to do almost anything!
I was called on to do an anniversary cake, which is out of my comfort zone but I took up the challenge. This is what the first one looked like....it was a delicious disaster.... ;-)
Coming on to the Delivery date I was able to pull some things together and come up with something looking like this. :-)
The names on the cake were blocked out to keep the recipients anonymous.
So if you are like me and you try something new, don't worry if it doesn't look like the picture next to the recipe. Eat that one up, cause i'm sure it'll taste just as good, then when you do it over it just might look way better than the picture next to the recipe. Until next time readers, keep sharing the joy!

Yummy to the Tummy Snacks
Hello, everybody! Today's blog is being done for one of my viewers who wanted to see some bite sized treats. Well I have just the thing.
However, before I move on, I would like to thank those who have commented on my blog thus far and I would also like to encourage others to leave their comments. I welcome constructive criticism, compliments and even if their is some dessert you would want to see written about in my blog, by all means let me know what it is.
Now today's snack is a rather simple snack to make and it is not limited to one type of fruit, in this case cherries. They are cherry rock buns but I call them cookies just because...Don't they look yummy.

Like I said before, these sweet treats are not limited to cherries, you can get creative with them and practically go crazy with what you put into them. You could get them with raisins, raisins and cherries, chocolate chip, chocolate chip and cherries, coconut and I could go on and on.

As I had mentioned before, cooking is my creative outlet and I believe in freshly done foods and also healthy foods. I often look up recipes of desserts or foods I have tried and put my own spin on it. Now I know there are alot of health risks out there which have made people skeptical about indulging in decadent desserts such as cheesescakes and chocolate cakes, but there are options which allow us to enjoy those same desserts without feeling guilty afterward. I personally offer low fat and fat free cheesecakes so that everyone can enjoy. So don't let the rich looks discourage you; stay healthy, indulge occasionally if you must and keep sharing the joy.

Pina Colada Cheesecake
Hey everybody! Like I promised, today i'm going to put up the name of the book which contains the recipe for the Pina Colada Cheesecake. Now this recipe calls for a springform pan which you can buy at any deparment store or even online. These pans are blessings in disguise; especially if you buy the non-stick pans. You don't have to worry about losing half your cake to the sides of the pan, you just release the clip and lift the sides away and you are good to go.
This recipe can be found in The Book Of Cheesecakes by Steven Wheeler.
My trade secret for these recipes which require a springform pan is to use heavy duty foil to line the bottom of the pan. Ensuring that it extends beyond the sides of the pan when they are attached would enable you to do the following with ease:
- Remove the cake from the pan and place on a nicer looking cake plate. From there you can trim the foil away with a kitchen shears.
- When the clip is fastened the foil becomes taut and the foil left hanging over can be pressed up against the side of the pan to prevent leakage.
- Slices can also be removed easily without losing your yummy crust to the pan.

Pina Colada Anyone?
No it's not the drink, it's a cheesecake made with all the refreshing ingredients that make a Pina Colada what it is. Yes, even the rum is in there. This cheesecake was the first of many of it's kind made to order.
Now this particular cake I absolutely love...the colours, the fresh fruit flavours, the alcohol, and the lightest, fluffiest meringue you'd ever wrap your lips around mmm-mmm.
This quickly became a favourite because of its eye-catching colours and the marriage of flavours creating a fiesta in your mouth with each bite. Truly a cake you would want to serve at a family dinner, I guarantee you won't have much to clean up when it's done.....it is lick your plate good. In my next blog I will post where you can obtain the recipe for this yummy-to-the-tummy dessert because I love to share the joy!

My favourite dessert to order when I eat out is cheesecake, any shape, any size, any flavour. So one day in my Food and Nutrition Class I asked my teacher if she had any recipes for cherry cheesecake and she gave me the simplest cheesecake recipe I would ever come across. From that very day I did cheesecakes for family functions and just so we could have that nice creamy dessert whenever we wanted.
In my senior year, I started baking cheesecakes and selling the slices to my friends. Before long, the demand for my cheesecakes spread throughout the entire senior class and my lunchtime was cut in half to accommodate my loyal customers.
It didn't take that much longer before a couple of my classmates wanted whole cheesecakes to take home and share the joy with their families. I sat back and thought to myself, 'I could be onto something here.'
From that moment up until this day I have tried my hand at some exotic cheesecakes that have flavours of all of our favourite desserts; Black Forest, Bailey's, Coffee Creme Brulee, just to name a few.
This blog is an outlet for me to showcase my talents and creations in the cheesecake arena. I will also walk you through some trade secrets to make it easier for you to make restaurant quality desserts in the comfort of your own kitchen.
