Pina Colada Cheesecake

Hey everybody! Like I promised, today i'm going to put up the name of the book which contains the recipe for the Pina Colada Cheesecake. Now this recipe calls for a springform pan which you can buy at any deparment store or even online. These pans are blessings in disguise; especially if you buy the non-stick pans. You don't have to worry about losing half your cake to the sides of the pan, you just release the clip and lift the sides away and you are good to go.

This recipe can be found in The Book Of Cheesecakes by Steven Wheeler.

My trade secret for these recipes which require a springform pan is to use heavy duty foil to line the bottom of the pan. Ensuring that it extends beyond the sides of the pan when they are attached would enable you to do the following with ease:

  • Remove the cake from the pan and place on a nicer looking cake plate. From there you can trim the foil away with a kitchen shears.
  • When the clip is fastened the foil becomes taut and the foil left hanging over can be pressed up against the side of the pan to prevent leakage.
  • Slices can also be removed easily without losing your yummy crust to the pan.
